The Tommy
Using our dry-aging steak locker, which you can find in the market space, the team dry-age tomahawks for up to 10 days (on top of 28 days wet aging). With natural enzymes at work this process creates a more concentrated, beefy flavour. Once on the grill, Chef Dan keeps things simple with minimal seasoning and classic sauces, specifically chosen to suit each cut of meat.
For those of you who joined us last year for Tommy N' Tannin Tuesdays, things have changed a little.
