Our team dry-ages tomahawks for up to 10 days (on top of 28 days wet aging). With natural enzymes at work this process creates a more concentrated, beefy flavour. Once on the grill, Chef Dan keeps things simple: perfect seasoning, perfect doneness.

Accompanied with all the fixins; duck fat potatoes, mushrooms of all shapes, broccolini, roasted garlic and an assortment of sauces.
